Meatballs in Tomato and Wine

I’m trying to make it easy for myself at the moment, by including a few little shortcuts and ready meals in my meal plans. I’ll never tire of whipping up a home made meal most nights – I love to cook – but sometimes it’s just nice to keep it simple and chill out while something easy and quick simmers away. The other bonus with using a few cheat ingredients is that it usually means less washing up – fine by me!

So although I obviously know how to make meatballs, and indeed realise that they’re really easy, I bought a packet of Sainsbury’s finest without too many nasties for this. And pretty good they were too 🙂

Here’s how I used them:

Meatballs in Tomato and Red Wine Sauce
(serves 4)

400g of meatballs (home made or shop bought)
splash olive oil
1 tin chopped tomatoes
splash red wine
1 teaspoon oregano
1 teaspoon sugar
salt and pepper

Method:

1. Fry the meatballs on a medium heat for about 8 minutes, or until cooked through.
2. Add the rest of the ingredients and boil on a medium heat for 5 minutes to cook the alcohol from the wine off, then reduce the heat to low and continue to simmer for another twenty minutes.
3. Scatter with fresh basil and serve with lots of crusty bread to mop up the juices.
