Time for something fresh and juicy for lunch, or a light supper. I don’t know about you, but I’ve got a ton of cheese in my fridge, and rather than scoff it on crackers after dinner, I thought I’d make the most of it by placing it centre stage in this zingy salad – along with some top quality yellow stickered ham I picked up for an absolute bargain the other day.
Salad’s can’t just be a pile of green with a watery chopped up tomato on top for me. They have to have big chunky real ingredients and a super duper dressing so that every bite is deliciously flavoured. This one’s nice for texture too, as the crunchy radishes contrast with the creamy brie – so there’s a lot going on for all those bored of roast dinners.
Ham and Brie Salad
around 100g chopped brie
2 large slices of chopped ham
2 handfuls chopped little gem lettuce
1 handful sliced radishes
1 finely chopped spring onion
1 handful halved cherry tomatoes
splash cider vinegar
salt and pepper
1. Mix it all up and devour!
