Just a little quickie this week – a few days of healthy, veg filled meals to keep my little tum going and hopefully germ-free until Christmas!
Monday lunch – Scrambled Eggs on Toast with Tomatoes as I’m working from home and have the luxury to slowly melt butter into eggs and fold until just set 🙂
Monday dinner – Puy Lentil Chicken Stew (I’ll have to blog this soon as we eat it so much and it’s so versatile).
Wednesday lunch – Hummus and Sweet-Chili-Spiced Rice Cakes
Wednesday dinner – Out to a fancy restaurant with some girlfriends 🙂
Friday lunch – Healthy and Hearty Tomato and Lentil Soup
