Chunky Autumn Soup

Hello!

I’ve  had a little break away which has done me no end of good. I feel full of beans and don’t really want to go back to normal. But foodwise – I do. And speaking of beans, I’m actually full of meat. We’ve indulged on holiday in fine wines, local meats and LOTS of alcohol, and I’m quite looking forward to something a little lighter over the next few days – and in upping my veggie intake to keep me going through the next few chilly months.

Hope this plan gives you some ideas.

Monday Lunch – Little Gem, Tomato and Squash Salad with Toasted Pumpkin Seeds
Monday Dinner – Chickpea, Carrot and Coriander patties on Ciabatta with Celery, Radish and Rocket Salad

Tuesday Lunch – Little Gem, Tomato and Squash Salad with Toasted Pumpkin Seeds
Tuesday Dinner – Out for a pizza 🙂

Wednesday Lunch – Chilli Cabbage and Cashew Salad with Peanut Dressing
Wednesday Dinner – Veggie chilli with sweet potato

Thursday Lunch – Chilli Cabbage and Cashew Salad with Peanut Dressing
Thursday Dinner – Veggie chilli with sweet potato

Friday Lunch – Kimchee (here’s hoping – I’m going to try and find gochujang this week
Friday Dinner – Cod, Prawns, New Potatoes and Leeks

Saturday Lunch – Vegetable Soup
Saturday Dinner – Spaghetti Bolognaise

Sunday Lunch – Scrambled Egg on Toast
Sunday Dinner – Too far away to think about this time!
