Sumac Roasted Vegetables with Chickpeas

Hello all! It’s another short meal plan this week as we’re away AGAIN this weekend! Which is nice πŸ™‚

Here’s what I’ve got planned:

Monday lunch – Crackers and Brie
Monday dinner – Sausage Buns and Tomato and Sweetcorn Salad

Tuesday lunch – Crackers and Brie
Tuesday dinner – Pollo alla cacciatora

Wednesday lunch – Vegetable Itsu Crystal Noodles (my new favourite thing)
Wednesday dinner – Salmon, New potatoes and Peas

Thursday lunch – Duck Itsu Crystal Noodles
Thursday dinner – Beef ravioli

Friday lunch – Egg, lettuce and cucumber salad
Friday evening – Roasted Veg and Chickpeas (coming soon on the blog!)

    Roasted veggies and chickpeas sounds awesome! I love roasting up veggies for an easy meal. Looking forward to seeing that coming to the blog πŸ™‚

    The veggie itsu crystal noodles sound interesting too, I’m off to find out what that is!
