Meal Planning Monday 1 August 2016

I’ve been eating a snacky little assortment lately, and it’s been just lovely. Lots of sausage rolls, pork pies and salads. I think I lost my cooking groove a little – maybe it’s been the hot weather or just a really busy non-‘me’ couple of moths of my life. It is what it is, but I’m doing a little more this week – it’s a short week as we’re off gallivanting at the weekend – and looking forward to getting stuck in to a spot of cooking before we go.

Here’s what I’ve got planned:

Monday lunch – Cottage cheese and tomatoes on toasted rye bread
Monday dinner – Roast chicken, corn on the cob, refried beans, sliced avocado and tomatoey rice (from Rick Stein’s stuffed peppers recipe)

Tuesday lunch – Chicken Salad with Cucumber, Tomatoes and Basil
Tuesday dinner – Sausage baps and salad

Wednesday lunch – Hummus and Peppers
Wednesday dinner – Vegetable Vietnamese Rice Paper Wraps with Soy Sauce (to be blogged soon!)

Thursday lunch – Hummus and Cucumber Sticks
Thursday – Vegetable Vietnamese Rice Paper Wraps with Soy Sauce

Friday lunch – Tomatoes on Toast
Friday dinner – we’re off for a weekend away – can’t wait!
