I’m both home alone and in need of using up lots of snacky picnic food this week. I want to be healthy too, as I’ve been HUGELY over-indulging lately as a result of going away for work (=meals out and conference lunches) and it being summer (=picnics, barbecues and icy cold rosé + too many family-size bags of crisps in the garden).
So here’s the plan – what are you all eating now that it’s summer and the weather is hot hot hot?
Monday lunch – Pea and Lemon Dip with sugar snap peas
Monday dinner – picnic dinner (but a small portion!) of sausage rolls, baby plum tomatoes and radishes
Tuesday lunch – Mini Pork Pie salad with radishes, lettuce, tomato and pickled silverskin onions
Tuesday dinner – New Potato, Onion and Mushroom Hash
Wednesday lunch – Egg and French Bean Salad
Wednesday dinner – New Potato, Onion and Mushroom Hash
Thursday lunch – Egg and French Bean Salad
Thursday dinner – Moroccan Spiced Roasted Carrot, Beetroot and Chickpeas
Friday lunch – Hummus and Sugar Snap Peas
Friday dinner – Vietnamese Rice Paper Rolls with Carrot, Beetroot and Cucumber, with soy sauce
Saturday lunch + dinner – out at a wedding!
Sunday lunch – scrambled eggs
Sunday dinner – whatever’s left!
Hope this inspires you – I’m very veg-heavy this week as I’ve got a veg box delivery on Monday – I’m really excited as I’ve not had one for ages – the last company I used no longer exist though so I really want to keep up this one – we need to keep these places alive!
