Ham, Pea and Avocado Salad

Well anything with avocado in it’s going to be good isn’t it? It’s always the best part of the salad – that creamy, soft clay texture is just a dream. Mmmmmmm. I’d decided to cook my own ham for this. I’m a little sick of watery ham pumped with odd chemicals and slid into plastic in the supermarkets. And cooking ham is surprisingly easy – just wrap it in foil and stick it in the oven. I turned to Delia for this, as I always do when trying something new, but traditional. I actually left it a little too long in the oven as we started watching a film and completely forgot about it – but it was none the worse for wear after a couple of hours in the oven.

It’s easy to see why peas and ham have been hanging out together for so long – salt and sweet – chewy and soft. A spot of mint, parsley and the might of the avocado makes this one of the most simply satisfying salads I’ve made for ages.

Ham, Pea and Avocado Salad
(serves 1)

one large, thick slice of ham, chopped
3 tablespoons frozen peas, defrosted
1/2 avocado, chopped
a few mint and flat-leaf parsley leaves, torn
two large handfuls lettuce

Method:

  1. Just mix!
