Meal Planning Monday 16 May

I’ve had a busy busy weekend with lots of playing out in the sunshine, walking by lakes, exploring mountain streams and breathing in fresh moorland air high up in the Lakes. Now I want a few nights of peaceful pottering in the kitchen, Malbec in hand, Brideshead Revisited on the telly. And this food:


Mediterranean Vegetable Stew

Monday – Mediterranean Vegetable Stew. This is what I found on the BBC Food website (Simon Rimmer) after I got a bit bored of ratatouille. Celeriac and broad beans keep it interesting; fresh crusty bread makes it a Big Feast 🙂

Tuesday – Stuffed Peppers (By Rick Stein). Not sure what to have with these yet. Maybe some chicken. We always have that. What else? Will decide tomorrow.

Asparagus, Broccoli and Chive Pasta

Wednesday – ABC Pasta, or a variant, because I can’t stop making these pastas. You know when you make some recipes and wonder why you haven’t been making them for YEARS? This is one. Whatever you have in the cupboard / freezer / fridge – if it’s green then chuck it in. Lots of parmesan, lemon juice and black pepper recommended.

Ultimate Cottage Pie

Thursday – Ultimate Cottage Pie, as I’ve had some potatoes in the cupboard for AGES and I’m bored of looking at them.

Friday – More Cottage Pie

Saturday – Not sure yet. I’ve had a request for beef stew from Mr Roast Chicken, but we may be beefed out from the Cottage Pie. Maybe some bean burgers, then.

Sunday – Again, I’m writing this on Sunday night and it feels very very far away. I’ll decide later.



Monday – Pan Con Tomate. Again. Because it’s delicious.

Pea Dip

Tuesday – Flatbreads and Pea and Lemon Dip

Wednesday – Same again – I’ve got LOADS to use up!

Roasted Garlic and Basil Bean Dip

Wednesday – Roasted Garlic and Cannellini Bean Hummus

Thursday – And the same again 🙂

Thrifty Lentil and Tomato Soup

Friday – Lentil and Tomato Soup

Saturday – Is Eggs is good 🙂

Sunday – Again – this is just Too Far Away at the moment 🙂

  1. Hi Helen, can I come and live with you, not only are you organised, but your food looks amazing! I love anything pasta, haven’t had tomato and lentil soup in a few weeks, keep meaning to make bean burgers ( I love them ,but the family isn’t so keen) and would happily eat dips and crusty bread for lunch. Oh and I love eggs! My family think I’m bonkers as I’d eat several daily if I could!

    I have no idea what we are having for dinner later today, but you have given me an idea for weekend lunch.



    1. Ooh maybe try the bean burgers again with different ‘extras’? I use lots of lemon juice and tahini – but they’re good with coriander, and also really nice with black beans + squash 🙂

      1. It’s certainly worth a try. Maybe if I omit (or mumble) the word bean or veggie, when they ask what’s for tea, they wouldn’t notice.
