Orange and Olive Salad

I wouldn’t have thought to put the orange in this recipe. I made it as I had a slightly boring iceberg lettuce and tomato combination going on and found some juicy black olives leftover in the fridge which I decided to add to spice it up a bit. I must have seen a programme or read a recipe somewhere and in the distant depths of my mind something told me to add some sliced orange. It’s perfect! Sweet and tangy and it goes AMAZINGLY well with the olives. Two completely different flavours complimenting each other perfectly makes this salad one of my faves 🙂

Orange and Olive Salad
(serves 1)

1/4 iceberg lettuce, shredded
1 tomato cut into wedges
1 small handful of really good black olives, pitted
1 orange, peeled and cut into segments
a handful of mixed fresh herbs, torn up (I used basil and mint)
drizzle of olive oil
squeeze of lemon juice
salt and pepper to season


  1. Just mix it up!
