Storecupboard Summer Smoothie

Storecupboard Summer Smoothie

Hello there, how is everyone on this Bank Holiday weekend? I wish every weekend was 3 days. Then we’d all have one day to relax and recharge, then TWO days for fun and activities. Sigh.

I got up really early and made this sweet and creamy summer smoothie to get me in the holiday mood yesterday. I’ve been eating smoothies for breakfast for the past couple of weeks and they’re making me smile so much 🙂 This one is really handy as it has mainly storecupcoard ingredients. The use-by date on coconut milk is usually quite long, and even after it’s open you’ve got at least 5 days to use it up, and then all you need is to open a tin of fruit. I reckon this would be really nice with tinned pineapple too – maybe with a bit of lime juice to offset the sweetness.

Some people have commented that they wouldn’t feel full enough after one of these, and I suppose they’re not very stodgy so if you had an early breakfast you’d be quite peckish by lunchtime! But I’m lucky enough to start work at 10am, so I’ve been decanting these beauties into a little bottle and sipping them at my desk when I arrive, so I haven’t had that problem yet. I will try blending up some oats with them too though at some point in case I need to eat earlier. Not too sure about all the protein powders that would also provide a bit more umph though. They remind me of a couple of guys I went to uni with who had huge jars of strange looking pink powder they used to tip into pints of milk after gym sessions. Maybe the all-natural ones would be a little less intimidating though.

Anyways, here’s my little cup of summer – enjoy!

Storecupboard Summer Smoothie
(serves 2)

1 banana, cut into pieces and frozen
1 tin drained peach slices in juice
splash coconut milk (add as much as you need to get the consistency you like)
2 tablespoons low fat natural yoghurt

  1. Whizz! (I do the fruit first, then I can add the liquids to dictate the consistency)

  1. I share your aversion to the big pots of protein powder. I first came across them with people who wanted to work out and bulk up and I still associate it with that. I now know people that just add it to smoothies, etc. for a little added protein, but I still can’t get that first association out of my head.

    1. I think maybe some seeds or oats will do me for now-I like real food!
