This is what to make if you want something gorgeously moreish, filling and healthy. And don’t we all want that ALL the time? You’ll be filled up due to all the beans 🙂 but you won’t feel all bloated and fat as it’s got just a little smidgen of oil to fry the onions. We mopped up the tomatoey juices with generous chunks of crusty bread which I would whole-heartedly recommend. Chopped up bacon could be a nice addition if you fancy a bit of meat instead of this vegan feast.
I hardly ever follow recipes exactly but this time I almost did, so I can’t really claim credit for this. The only things I changed from this Simon Rimmer recipe via the goode olde BBC Good Food website was to omit the basil, as I didn’t have any, and I patiently removed the skins from the broad beans, as they’re nicer like that. Obviously it took ages and I got really bored – so DEFFO skip that step if you’re in a hurry, or indeed, if you have anything at all better to do, as I’m sure you will.
