Yes, yes, I know smoothies are SO 2015. I read lots and lots of blogs about people kick-starting the year with a smoothie a day for breakfast. Goodness knows why it’s taken me so long to hop onto the bandwagon – its a FANTASTIC way to start the day. It’s funny to think that I’ve been cooking for over 10 years now but I’ve never made a smoothie! I used to have an Innocent smoothie (strawberry and banana) every day for breakfast back in the day, but home-made just knocks the socks off shop bought. So last week I got myself a frozen banana and strawberry mix and chucked it in the food processor (I don’t have the fancy kit yet). It was a little thick for my tastes so I added loads of milk, but it seemed a little watered down after that so I might experiment with fresh strawbs next time.
I then tried frozen raspberries and banana and that was supergood. But not quite sweet enough for me (or maybe I’m just used to Innocent). So here’s my favourite of the test-runs so far, a sweet and tangy tropical smoothie – just adjust the amount of milk to get it to the consistency you like.
Mango, Coconut and Banana Smoothie
4 handfuls of frozen mango
around 400ml coconut milk
