Meal Planning Monday 25 April


Last week’s plan went a little askew, since a colleague and I had an impromptu pub meal in the sun last Tuesday and the feta and spinach pasties stretched to 3 meals! So I only got round to making the veggie stew on Sunday, with leftovers tonight. But here’s next week’s plans:


Monday – Courgette, celeriac and bean stew with crusty bread

Tuesday – Beef Goulash with savoy cabbage

Wednesday – Beef Goulash with carrots and peas

Thursday – Broad Bean and Broccoli Pasta (a variation on ABC pasta)

Friday – Cottage Pie

Saturday – Roast Chicken Dinner

Sunday – Roast Chicken Dinner leftovers – hotpot? Pasties?


Monday – I’m away at a conference so hopefully the catering will be good!

Tuesday – Pea and Broccoli Soup

Wednesday – Eggs and Asparagus (maybe scrambled if I can get home, boiled if not)

Thursday – More Eggs and Asparagus

Friday – Cuppa Soup and Bread

Saturday – Scrambled Eggs

Sunday – Baked Beans on Toast
