This is what to eat for lunch if you’ve:
a) Got a sweet tooth
b) Want to eat healthily for lunch
c) Still want to feel full afterwards.
Mediterranean / Middle Eastern mash-ups really inspire me. I adore middle eastern foods – the mezze platters, the dips, the bread… I’m not usually a fan of the sweet / savoury mix when it’s in predominantly savory meals, but somehow for salads I don’t mind.
Soaking the dates in vinegar was something I read about somewhere amongst Ottoleghi’s many many tricks and treats for unusual twists and flavour combinations – it cuts through the sweetness and makes these little nuggets SO moreish. He also often uses sweet potatoes or squash in his salad recipes, which makes them filling enough to keep you going through a long day, and I also added almonds here for a extra protein energy boost.
I found that as the vegetables were cooked in olive oil there was no need to add any oil to the dressing – but feel free to add some if you think it’s needed.

Sweet Tooth Salad
3 smallish sweet potatoes, peeled and sliced
2 red onions, peeled and quartered
splash olive oil
about 150g of baby spinach
the seeds from 2 pomegranates
9 dates, chopped
2 tablespoons white wine vinegar
balsamic vinegar, salt and pepper as needed to season and dress the salad
- Pre-heat the oven to 180 degrees and prepare the sweet potatoes and red onions
- Put the chopped dates in a small bowl and cover with the white wine vinegar
- Roast the sweet potatoes and onions for about 30 minutes until soft
- Combine all of the ingredients and mix well, leaving some pomegranate seeds and almonds to scatter over the top.
