Sometimes it’s nice to eat normally after a weekend away isn’t it? I enjoy the odd / very frequent weekend of over indulging but now I’m ready for the crunch of some salad and a blast of vitamins to see out the rest of these cold days until things warm up. Here’s what I’m planning:
Monday – Grilled Chicken with Tomato and Basil Bruschetta (this was so nice, fresh and healthy last time I think it’ll become a regular!
Tuesday – Courgette, Celariac, Tomato and Bean Stew with crusty baguette
Wednesday – More stew!
Thursday – Feta and Spinach Pasties
Friday – More Pasties
Saturday – Beef Burgers
Sunday – Spaghetti Bolognese
Monday – Thrifty Lentil and Tomato Soup
Tuesday – Epic Egg Salad (from Jamie Oliver)
Wednesday – Epic Egg Salad
Thursday – Roast Beetroot, Sumac and Chickpea Salad
Friday – Vegetable Soup
Saturday – Scrambled Eggs
Sunday – Bacon Sarnies
