Mealplanningmonday

This is a wee little meal plan, as we’re away at the end of the week – but I thought I’d share it anyway, if for no other reason than to organise myself into using up bits and pieces from the fridge before we go away – I love a challenge!

Dinners

Monday – Sausage Baps in soft white buns with Lambs Lettuce, Radish and Tomato Salad. Love this meal – I love a good burger, and we always have ours with loads of salad so it feels like quite a healthy meal.

Tuesday – Sausage, Potato, Onion and Lemon Stew. This is a tasty and quick dish from Rick Stein’s Mediterranean Escapes. It tastes of olive oil and the sun and is a little bit like going on holiday near a nice warm beach in a villa with a terrace and swimming pool. Ahem.

Wednesday – Chicken Curry with rice and flatbreads. I’m trying a jar of curry from the Meena range. She helped develop the Patak range and is now working on curry sauces. I’ve never cooked with these as most of the sauces (not the pastes – they’re different) are full of weird and wonderful ingredients, but this particular range looked quite natural and I was tempted by a special offer this week so I’ll see how it goes!

Thursday – Pork Chops with new potatoes and peas. Simple, plain, good 🙂

Friday – Sunday – we’re away!

Lunches

Monday – Cuppa Soup and Corn Cakes. Not great nutritionally (see above self-satisfied comment on additives) but I need to use up the corn cakes before they go chewy.

Tuesday – Hummus and Corn Cakes (see above).

Wednesday – Carrot and Sweet Potato Soup with crusty bread.

Thursday – Tomatoes on Toast.

    Sounds a great plan! And you'[ve even planned lunches too -how organised! I generally use leftovers for lunches or make up a salad/soup from the freezer.
