Meal Planning Monday 4 April 2016


Hello folks it’s that time again – what are we all cooking this week? I’ve been getting my fill of gorgeous pink rhubarb and discovered the joy of corn cakes. Like popcorn, in cracker-form, similar to a rice cake – what’s not to like? Also I’ve been warming up (it’s still chilly isn’t it?!) with salted caramel green tea, and milky PG tips. Plus rather too many cakes (chocolate nancy, almond cookies and custard creams) provided by my lovely colleagues at work. And best of all – a bottle of champagne my boyfriend suggested we purchase and glug last Friday night – quite possibly the best suggestion he’s ever made.

I’m going to start adding my lunches too to these posts as I always like to have a nosey at what people eat for lunch – it gives me ideas as I hate to get bored!

Pan con Tomate

Monday – Grilled Chicken with Pan Con Tomate. We’ve recently discovered the joys of grilled, rather than fried or roasted chicken. No idea why it’s taken me this long to realise that grilled chicken has that lovely chargrilled taste that reminds me of summer and barbecues, and most importantly – it doesn’t go dry! I was convinced it would go dry but not a bit of it – juicy on the inside, crisp on the outside. Fab.

Tuesday – More of the above!

Extra Veg and Extra Easy Shepherds Pie

Wednesday – Spaghetti Bolognese

Thursday – I’m out πŸ™‚

Friday – Cod, Mash and Peas

Saturday – Oven Fish and Chips

Chunky Autumn Soup

Sunday – Vegetable Soup and Crusty Bread


Monday – Lentil and Frankfurter Soup (coming soon on the blog)

Tuesday – Home-made Salad Box of Roasted Sweet Potato, Fig and Red Onion Salad and Spinach, Date and Almond Salad

Wednesday – Ottolenghi’s Tomato and Pomegranate Salad

Thursday – Cuppa Soup and Corn Cakes

Friday – Tomatoes on Toast

Saturday – Scrambled Eggs on Toast

Sunday – Bacon Sarnies πŸ™‚
