Lamb Burgers

I’ve started shopping in little bits, rather than one weekly shop. Although I love to plan, I was finding that I was adding necessary stress to my life by sticking to a plan, preparing meals in batches and having to eat exactly what I thought I’d want to eat every week or risk wasting things. Most of my meals are so quick there’s no real need to prepare all my weekday meals at the weekend, although I still make things like this tasty stew and my Extra Veg and Extra Easy Spaghetti Bolognese on a Sunday morning, as the flavours then have time to deepen.

This is one of my quickest yet. Just chuck the ingredients in the food processor and they’ll be ready in the time it takes to make a salad. Do use the tastiest freshest lamb you can find. I was bemused, as always, to find New Zealand lamb in my local Marks and Spencers. I know it’s jolly nice, but we’re a short drive away from the LAKE DISTRICT and even before you get there you can see fields and sheep all around. So I nipped into the butchers where, for 50p cheaper, I had my very own lamb pieces from local sheep minced up and they made these juicy tasty little burgers.

So the lamb was from the North of England, but I fancied taking a flight of fancy to Greece, so I served these with a chunk salad and some creamy tzatziki. A few flatbreads wouldn’t have gone amiss either. Enjoy!

Super Quick Lamb Burgers
(serves 4)

1 onion, peeled and chopped in half
1 clove garlic, peeled
salt and pepper
450g super duper quality minced lamb
splash olive oil


  1. Pop the onion, garlic, salt and pepper into the food processor and blitz until fine.
  2. Add the lamb mince and pulse a few times until all is combined
  3. Heat a griddle pan, shape the mixture into 4 patties and sprinkle a bit of olive oil over them.
  4. Cook for about 5 minutes on each side until cooked to your liking.

  1. Yeah I still meal plan too – just nice to think I haven’t planned my life to death! And I can buy fresher food too. Have you checked out She runs an almost weekly mealplanningmonday series 🙂

    We’ve started doing two or three smaller shops a week as well. We still meal plan, but if we get to midweek and we have stuff that needs using up we’ve got a lot better at diverging from the plan rather than wasting food.

    Love the sound of these – a good lamb burger is always a treat. x
