GuacamoleMmm get a load of that. Perfect Friday / Saturday night food after one too many proseccos in the pub. What you do need though is some good crusty bread, and avocados that are actually ready to eat. So you’ll probably have to buy avocados and keep them in the fruit basket until they’re ripe. This will take up to a week. When they’re ripe – go out and buy the crustiest bread you can get your hands on and come back to this little treat.

I’ve already blogged about this, as it goes with my Chicken Fajitas With All The Trimmings but I’ve tweaked it and taken a better photo to show it off in all it’s Kermit-hued loveliness 🙂

(serves 4)
2 very ripe avocados
1 clove garlic, crushed
zest and juice of one lime (or two limes, if they’re not very juicy)
1/2 red chilli, very finely chopped (or to taste)
splash of good quality olive oil
salt and pepper to taste


1. Mash up the avocado with a fork. It’s quite nice to leave it chunky – but just keep mashing until you get it to a consistency you like.
2. Add all the other ingredients and mix – but keep tasting, and adjust the flavours as you like. It’s best made and served fresh as the flavours change and it discolours if you leave it for too long.
