How is everyone this Monday? I’ve had a busy bee weekend of walks and entertaining, and last week was a bit of a whirlwind too. I’m planning a quiet week of reading, pilates and healthy grub this week after boozing and grabbing food on the hoof for the last few days. So I’ve made an enormous vat of minestrone (a larder-happy mix of onion, garlic, carrot, fresh tomatoes, potato and borlotti beans) and a big pile of bean shoot salad for my lunches this week.
Monday – Better Jackets and Beans made at the same time as I made the minestrone, since the onion and garlic chopping and opening of tins was going on anyway. And I note with a smile that I made this at almost exactly the same time last year, also following a dolloping of snow.
Tuesday – Maybe more Better Jackets and Beans if we have enough left – I only used 2 tins of beans this time and no lentils, so it might be time for…
Wednesday – Roast loin of pork with whatever vegetables I pick up from town. I’ll have cries for broccoli, but will perhaps use parsnips. I just can’t remember when we last ate pork. Or meat for that matter.
Thursday – Again, depending on quantities they’ll probably (hopefully!) be enough for Round 2 of roast pork. If not, I’ll start on the…
Friday – Spaghetti Bolognese. It’s been requested. And in any case, every time I make it I wonder why I don’t make it more.
Saturday – More Spaghetti Bolognese
Sunday – I’ll have had my veggie delivery box by this time, so I’ll conjure something out of that. Haven’t ordered one for ages, so looking forward to lots of knobbly roots 🙂
