Sunshine Sardine Salad

Sunshine Sardine SaladAlthough the alliteration in the title of this salad pleased me, it’s also apt for this bright, vibrant mixture of flavours and textures – perfect for one of those bright sunny days where the sun is high and hot, and one takes a leisurely lunch outside on the terrace, with a chilled glass of sauvignon.

I think we did get a couple of such days last year.

Or was that the year before?

It’s a lovely salad anyway – just a touch of chilli sauce makes this very moreish combined with the salty sardines. And right for a lunch – I don’t like a lot of bread in the middle of the day as I’m prone to having a terrible 3pm sleepy lets waste a bit of time few hours. Something light keeps these at bay and this salad is still filling enough to keep you going through the afternoon. Enjoy!

Sunshine Sardine Salad
(serves 1)

1 tin sardines, drained and roughly mashed
1 handful beansprouts
a 10 cm chunk of cucumber, chopped
1/2 large tin of sweetcorn, drained
2 tomatoes, chopped
1 head of pak choi, chopped
1 carrot, grated
1/2 tablespoon sweet chilli sauce
salt and pepper

Method
1. Mix all of the ingredients together.
2. Eat.
